This super easy vegan sausage and peppers dish started out using tofu as the protein. Although it’s still delicious with tofu, the vegan sausage is definitely more of a crowd-pleaser! I’ve made this for different friends and family members who don’t eat plant-based and it’s gotten rave reviews from everyone. I use frozen multi-colored peppers to cut the prep time, plus they are easy to keep on hand for when I want to make this as a quick lunch or dinner. Serve on a bed of rice or a ciabatta, sandwich, or hoagie roll. It’s especially delicious on a slice of fresh Italian bread!
Ingredients
- Plant-based sausage links (we use Field Roast Smoked Apple & Sage)
- Frozen multi-colored peppers
- Onion
- Garlic
- Olive oil or your preferred cooking oil
- Rice vinegar
- Soy sauce or tamari
- Light brown sugar
- Cornstarch or arrowroot powder
How To Make Vegan Sausage and Peppers
Prepare the sauce by placing the sauce ingredients in a small bowl or glass measuring cup and whisking together until smooth. Slice the large onion and chop the garlic (if using fresh garlic). In a sauté pan, sauté sliced onion in the oil of your choice until it’s lightly browned. Add garlic and frozen peppers and continue to sauté. Add sauce mixture, turn down to simmer, and continue to cook. While the veggies are cooking, cut sausage links lengthwise and then into sections. In a separate pan, sauté the sausage links in a small amount of oil until the links are slightly browned. Add the browned sausage into the pan with the veggies and continue to simmer until the peppers and onions are softened to your liking. Enjoy! 😊
Recipe Notes & Variations
- Any vegan sausage links can be used here, although we recommend Field Roast sausage. We have also used No Evil Foods “The Stallion” Italian Sausage. Since these two products include their own spices, adding additional spice isn’t necessary, so be sure to taste before adding any spice of your choice. Just note that you may have to adjust the seasoning if you experiment with another vegan sausage brand.
- For a gluten-free version you can use the Beyond Meat Hot Italian sausages or the Lightlife Plant-Based Italian Sausage.
- If you have any leftovers, this recipe freezes great.
- You can use fresh peppers if you have them on hand, but the frozen kind makes for a super quick and easy vegan sausage and peppers meal.
- Try crumbling the sausages to make more of a bolognese-style dish.
- You can sauté the veggies in a little water instead of oil if you’re trying to cut back on oil.
Vegan Sausage, Peppers and Onions

- 1 package Field Roast vegan sausage (or 4 links / 12.95 oz. of your favorite plant-based sausage)
- 1 bag frozen multi-colored peppers (14 oz)
- 1 large yellow onion (sliced)
- 1 tbsp garlic (chopped or minced - use more if you like garlic!)
- 1 tbsp olive oil (or your favorite cooking oil)

- 1/3 cup warm water
- 3 tbsp rice vinegar (can sub white vinegar if that's all you have on hand)
- 3 tbsp soy sauce or tamari
- 1 tbsp light brown sugar
- 1 tsp cornstarch or arrowroot powder
