Vegan Sausage, Peppers and Onions

This vegan sausage and peppers recipe is an easy spin on the Italian classic using frozen peppers and your favorite plant-based sausage.

Recommended Equipment

Ingredients
  

  • 1 package Field Roast vegan sausage (or 4 links / 12.95 oz. of your favorite plant-based sausage)
  • 1 bag frozen multi-colored peppers (14 oz)
  • 1 large yellow onion (sliced)
  • 1 tbsp garlic (chopped or minced - use more if you like garlic!)
  • 1 tbsp olive oil (or your favorite cooking oil)

Sauce

  • 1/3 cup warm water
  • 3 tbsp rice vinegar (can sub white vinegar if that's all you have on hand)
  • 3 tbsp soy sauce or tamari
  • 1 tbsp light brown sugar
  • 1 tsp cornstarch or arrowroot powder

Instructions
 

  • Prepare the sauce by placing the sauce ingredients in a small bowl or glass measuring cup and whisking together until smooth
    1/3 cup warm water, 3 tbsp rice vinegar, 3 tbsp soy sauce or tamari, 1 tbsp light brown sugar, 1 tsp cornstarch or arrowroot powder
  • Slice the large onion and chop the garlic (if using fresh garlic)
    1 large yellow onion, 1 tbsp garlic
  • In a sauté pan, sauté sliced onion in the oil of your choice until it's lightly browned
    1 large yellow onion, 1 tbsp olive oil
  • Add garlic and frozen peppers and continue to sauté
    1 bag frozen multi-colored peppers, 1 tbsp garlic
  • Add sauce mixture, turn down to simmer, and continue to sauté.
  • Meanwhile cut sausage links lengthwise and then into sections.
    1 package Field Roast vegan sausage
  • In a separate pan, sauté the sausage links in a small amount of oil until the links are slightly browned.
    1 tbsp olive oil
  • Add the browned sausage into the pan with the veggies and continue to simmer until the peppers and onions are softened to your liking.

Notes

  • Any vegan sausage links can be used here, although we recommend Field roast sausage.  We have also used No Evil Foods "The Stallion" Italian Sausage.  You may have to just the seasoning if you experiment with another vegan sausage brand.
  • For a gluten free version you can use the Beyond Meat Hot Italian sausages.
