Vegan Meal Kits from Purple Carrot: My Experience

Hey, everyone! I recently got my hands on some Purple Carrot meal kits, and let me tell you, they were exactly what I needed to get out of my cooking rut. Here’s a breakdown of the three meals I tried and my honest take on each.

Greek Crunchadillas with Dilly Slaw and Tzatziki

First up were the Greek Crunchadillas. These came together in no time, and I loved the variety of flavors and textures. The sweet potato veggie burger from Actual Veggies was the perfect filling, made entirely from real ingredients like white bean, carrot, and cauliflower. I also loved that Purple Carrot partnered with brands like Fabalish for the vegan tzatziki, which was creamy and delicious.

These Greek-inspired crunchadillas were even delicious cold the next day 😆!

I even reserved a little extra tzatziki on the side for dipping—it was too good not to! The Dilly Slaw was fresh and crunchy, a perfect match with the wrap’s warm, hearty filling. Purple Carrot provided clear instructions, so this is a meal I feel confident I could recreate on my own.

Kung Pao Cauliflower with Garlic Cucumbers and Speckled Rice

Next up was the Kung Pao Cauliflower, which was just as colorful and appetizing as it sounds. I left out the chili garlic sauce to avoid the heat (spicy foods and I don’t always get along), and it still tasted amazing. The combination of speckled rice, crunchy peanuts, and garlic-infused cucumbers brought a wonderful balance of flavors and textures.

Such a great blend of textures and flavors!

This dish was a reminder of how simple adjustments can make a meal work for different taste preferences, and I was able to customize it without losing the essence of the dish. The final plate looked as good as it tasted—definitely a dish to impress!

Creamy Tomato Bisque with Quinoa and Parmesan Roasted Cauliflower

Finally, I ended with the Creamy Tomato Bisque, which might have been my favorite of the three. I roasted the cauliflower with extra garlic cloves as a topping, adding a rich depth that paired beautifully with the creamy bisque. The coconut milk in the soup had a pronounced flavor, which I really enjoyed. It was a bit more coconut-y than expected, but for me, that was a bonus!

This bisque is so warm and comforting as the weather turns chilly here in upstate NY.

The bisque was warm, comforting, and incredibly satisfying. Even though it was creamy, it didn’t feel heavy, making it the perfect cozy meal!

My Final Thoughts

Purple Carrot made me feel like a gourmet chef! I loved the high-quality, pre-measured ingredients and thoughtful collaborations with brands like Actual Veggies and Fabalish. The recipes were printed out nicely on their cards and were super easy to follow, and I appreciated that I could recreate these meals with ingredients from my local grocery store if I ever wanted to.
